I've only got one 3 1/2 drive bay on my new machine but have salvaged an
internal 100 zip drive from an old machine and could find an occasional use
for it on the new one. Getting a second 3 1/2 drive bay panel might be a
problem but I wonder if there's any feasible way of using it as an external
drive and taking an extension cable and power out of the back???

It will probably work but it really is not that difficult
getting a 5.25-inch universal monitoring frame for 3.5-inch
floppy drives, including the bezel. And it is not all that
expensive. It has always been the situation whereby chassis
makers do not provide enough 3.5-inch bays.
